TWD: Coconut Tea Cake





Dorie describes this as a "dry" cake and I certainly found it to be dry but in a good way. I have used coconut milk numerous times in curries and other entrees but never in a sweet application, so this was a first for me. I was pleasantly surprised by the subtle flavor and velvetyness it gave this Bundt.

This recipe was chosen by Carmen Cooks. She has the recipe posted on her blog. I think after this TWD month I'm slowly becoming a coconut lover (okay... maybe at least a coconut TOLERATOR!)

  2. That's a great-looking cake Tia! It doesn't even look dry to me - the second shot showing the cross-section - nice texture and so moist! I probably could finish the entire cake by myself!

  21. Velvety is such a nice way to describe a cake. I love the glaze and coconut that you added to your cake. I made the mocha bundt this week because I was out of coconut milk. I love reading the posts for this cake because I'm getting some wonderful ideas.

  25. i agree, the addition of coconut milk made it so smooth and velvety! I love the subtle coconut flavor. I made mine today and used grapefruit. i can't wait to post it tuesday.

  26. I made mine today and was wondering about putting a glaze on it. Yours makes it so appealing. Great pics! I love coconut milk they a - it is a necessity for a good pina colada! I added a bit of extra rum. Looking forward to tasting it.
