Happy Tummy chose Great Grains Muffins on pages 8 and 9. I made a couple of change to the recipe. I used breakfast syrup instead of maple syrup because I didn't have any on hand. I didn't use any nuts and I used frozen cranberries - the last of my stash from the holidays.
The texture was a little coarser than your run-of-the-mill muffin because of the whole wheat, rolled oats and cornmeal. I personally prefer a more cake-like (ie. unhealthier) muffin, but these were pretty good as far as a whole grain muffin goes.
They do look really pretty with the cranberries - sorry that these weren't for you, but if I could beam them up, I would definitely have them!
ReplyDeleteI feel like I haven't said 'hi' in ages, but I haven't been getting much TWD baking done. I don't usually love the agressively healthy things either, but there was enough bad stuff in here that I really enjoyed them. I used blueberries.

ReplyDeleteI have cranberries in the freezer and I wish I had thought to use them! I like the oats sprinkled on top too - I remember reading that tip on your blog quite a while ago.
