TWD: Citrus Sunshine Loaf



Lauryn of Bella Baker chose Citrus Sunshine Currant Muffins for this week's TWD. Her blog will have the original recipe or buy Dorie Greenspan's book for the whole lot of amazing recipes!

I loved the way the top of this loaf turned shiny and slightly crisp. Dorie was right when she named these "sunshine" muffins. The color was bright, happy and perfect for spring. Waking up to these muffins was nice on Sunday morning, despite the brutal daylight savings time change.

Psst... In 2 weeks it will be my pick! I can hardly wait!



My changes:
-Used all lemon juice instead of orange juice.
-Doubled the sugar (total 1 cup) to compensate for the sourness of the lemon vs orange juice.
-Omitted the currants
-Baked in one 9"x5" loaf pan - increased baking time by 10-15 minutes and lowered the temperature to 325 degrees F in the last 15 minutes.
-Increased baking soda to 1 tsp for a slightly higher rise and to work with added acidity from lemon juice.

  11. Well, if someone told me I could have just gone with lemon, I would have!! lol...that sounds and looks so good! I am a lemon addict. That said, this version with the orange was superb...definitely one of my new go-to recipes. Oh, and I am making this lemon loaf asap. Thanks for the tips.

  16. The lemon sounds really nice, and the loaf would go over well here, too.
    I browsed a little, and the java cookie sticks look fantastic! And I'm definitely going to keep the microwave brownie in mind when I need a quick fix.
