TWD: Corniest Corn Muffins



Jill of My Next Life picked Corniest Corn Muffins for this week's Tuesdays with Dorie bakealong.





I added about 1/2 cup chopped fresh cilantro and 1/2 tsp dried chipotle powder. Not being a cornbread fan, these muffins were surprisingly better than I expected. I loved how the cilantro gave a burst of color with the kernels of corn peeking through. The texture from the juicy kernels against the soft, fluffy muffin was really pleasant. The chipotle gave these slightly sweet muffins a nice kick. Next time I might add some chopped jalapenos and grated cheese too.   1. Hi Tia! Thanks for visiting my blog! I wanted to mentioned that on the Red Lobster biscuits the directions indicated you should brush the melted butter and parsley on after baking but I mixed it right in with the dough and baked it in :)

  8. Your additions sound wonderful and the green is so pretty in there! I wish I had thought to make some of mine in wrappers so they would be more portable for guys on the run to grab! Great job on these, always fun to find something you didn't think you liked would be something you did!

    My only tip is to take the onion and garlic out of the bacon fat instead of mixing it in with the rest of the stuff. You'll see what I mean. ;-)
