HERE or on page 228 of Baking by Dorie Greenspan.I'm not a fan of dates so I used chopped, dried apricots and baked this in a cake pan with a sprinkling of streusel topping instead of a loaf pan. It turned out kind of like a coffee cake. Yum!
I would say you made some excellent changes. Looks delish. I love dates so this was excellent.

ReplyDeleteWe are twins this week - I used dried apricots too. There were no dates at my store. Weird, huh? Anyway, mine is a very pretty cake, but we found it to be a bit dry. Yours looks moist and delicious.

I think apricots are a great idea! I love your bread/coffee cake! I used chocolate chips because I didn't have any fruit around:)

ReplyDeleteI used to bake with apricots and I need to do that more. I like dates so I really liked this week's choice. Good call adding the topping!
