TWD: Great Grains Cranberry Muffins
Christine of Happy Tummy chose Great Grains Muffins on pages 8 and 9. I made a couple of change to the recipe. I used breakfast syrup instead of maple syrup because I didn't have any on hand. I didn't use any nuts and I used frozen cranberries - the last of my stash from the holidays. The texture was a little coarser than your run-of-the-mill muffin because of the whole wheat, rolled oats and cornmeal. I personally prefer a more cake-like (ie. unhealthier) muffin, but these were pretty good as far as a whole grain muffin goes.

They do look really pretty with the cranberries - sorry that these weren't for you, but if I could beam them up, I would definitely have them!
I feel like I haven't said 'hi' in ages, but I haven't been getting much TWD baking done. I don't usually love the agressively healthy things either, but there was enough bad stuff in here that I really enjoyed them. I used blueberries.
I really like the way yours look, though. So pretty with the oats on top and the berries peeking out!
Very pretty! Great idea adding a few oats to the top! Mine definitely didn't look this appetizing!
the cranberries sound great
Wow! I love the fresh cranberries! They look great!
THey look so good..I needed more sugar in mine so I added some chocolate chips...pretty good but I need some sugar baby!!
oh tia - as always: great pics of great treats!
Cranberries would have been a perfect addition.
These look very pretty with the cranberries!
Looks good! I do love cranberries.
so pretty with those bursts of color :)
Cranberry is a good addition and it gives life to the look of the muffin.
I am presently typing my CopyCat recipe and will get it to you.
Ooh, I love how you sprinkled the oats on top! Looks lovely. Thank you for baking with me this week!
carnbreries--good idea. and i like your sprinkling of oats on top.
I have cranberries in the freezer and I wish I had thought to use them! I like the oats sprinkled on top too - I remember reading that tip on your blog quite a while ago.
I agree on the texture - and healthfulness :)
The cranberries look so pretty though!
The cranberries look so good in these! Perfect!
I'm all for unhealthy muffins, too, so I added chocolate chips to mine. Yours look yummy with fresh cranberries.
I prefer unhealthy muffins too...but these sort of seduced me. Love the cranberries - such a nice pop of color in dreary winter.
