TWD: Carrot Spice Muffins (Loaf)



This week's pick was by Nancy of The Dogs Eat the Crumbs. She chose Carrot Spice Muffins on page 14. I made a loaf and did about half carrot and half zucchini. It was a delicately flavored 'healthy' loaf.



I've missed a couple of weeks of Tuesdays with Dorie because it is summer and because I have not really had an oven the past month and a half as I'm still undergoing renovations. My brand new stainless steel appliances are scheduled to be delivered this Friday! Yes, this Friday!!! I have been waiting for this day for so long. I wasn't planning on replacing them (to save costs) but my dear, sweet, generous mother offered to buy them for me as a housewarming gift! I have been baking in her oven the past couple of months. Hopefully by this time next week I will be in my own kitchen, using my new oven.

  2. So excited you are getting new appliances. Got to love Mothers! I just got a new dishwasher, a gas range was next but my water softener died. I must have my soft water. Hopefully the washer and dryer will hang on a few more years, I really want a new range!
    Way to much info but new appliances are something to get excited about, just like these yummy muffins!

    Your loaf looks great, Im glad you enjoyed it. I loved the moistness of the muffins and I ate to many!

  4. How exciting to get a new kitchen! That's on our list of renovations but I'm not sure it will ever happen.

    I really liked these muffins. I loved all the spices they contained.

  10. Wow, your new appliances sound like they are going to be wonderful! Renovations are a lot of work, but the end result is so worth it, imo. Thanks for going the extra mile (or however far it is to your mother's house) to bake these muffins with me this week! I would love to have a slice of your "veggie" loaf - it looks more appealing than muffins do, actually...

    Will have to try the loaf route, AND with zucchini.
