Chocolate Cupcakes - Happy Easter!



We're just getting ready to go for a pancake breakfast and Easter Egg Hunt at my son's preschool. Right now as I type this he's pretending to be a little chicken making peep-peep noises on the bed beside me.

I just bought the Martha Stewart Cupcake book from Costco - only $15.99 - so of course I used any excuse to make some cupcakes. (I also bought the companion cookie book too because I couldn't resist). This is the first recipe I've tried and I'm pleased that they turned out moist, chocolatey but not too sweet. These One Bowl Chocolate Cupcakes turned out light and fluffy. It seems like cupcake stores are popping up everywhere I turn. 2 new ones just opened up in our local mall. $3-5 for one little cupcake - yikes!

I love the Cupcakes book and have been baking with my long-time friend (she lives 8500 miles across the other side of the world!) Tina. Some of the recipes are hit & miss but most we've tried were good. It's fun! Check out the chronicles of our bake if you have time. Happy Easter!

awwww your son is cute! I love the little chicken by these cupcakes! I have one just like this on a shelf at home but his beak is falling off!

Such a good buy! I adore that cookbooks. Beautiful cupcakes! I haven't tried this recipe yet but I'll have to soon if you say it's good!

Lovely frosting! I've had my eye on that book too, and seeing these cupcakes may have finally convinced me to buy it.

Happy Easter Tia! Those cupcakes are as pretty as colored eggs. It always amazes me how much people pay for a single cupcake...often a dry and tasteless one at that. Bet yours are yummy!
