TWD: Strawberry Shortcakes



Random info: the Strawberry Shortcake doll was updated in 2008: She has a cell phone now, doesn't wear blush and has a tinge of lipstick. She also has forgone gumdrops in favor of freah fruit. Those marketing people must have so much fun dreaming up all this stuff.





These are delicate and crumbly and wonderful. I cut mine into rectangles to avoid having leftover pieces to squish together. I didn't serve them warm out of the oven as recommended. I only served them later in the day and I zapped them for 15-20 seconds each in the microwave to heat before filling with ice cream (instead of whipped cream) and sugar-tossed sliced strawberries. It tasted like the embodiment of summer. I almost forgot about our erratic BC weather. I have yet to put away my winter jackets because some days it's still so cold here!





I read that this recipe made a big batch so I made 1/2 a batch with less sugar and used them to make ham and cheese 'sandwiches' that got toasted in the oven just until the cheese melted. The slight sweetness actually went really well with the cheese and ham. My son's not a big sandwich eater but he actually ate them without bribery! Sweet or savory, these are yummy!

Thanks to Cathy for a yummy treat that will hopefully kick off more good weather in the weeks to come.

Oh the strawberries and ice cream look sooooooo good (I could eat that right now for breakfast) and I love the idea of making sandwiches with them too. I bet they were delicious!

I bet the ham was great on the less sweet ones. I LOVE country ham and biscuits...this idea could be dangerous.

Note: I added a tiny bit more cream so they would hold together a bit better (less crumbly) because I knew I would be making some into sandwiches.

I also froze them on the baking sheet for about 20-30 minutes, so maybe that's why mine look sturdier?

Ooooh - you used one to make a SANDWICH!! You are brilliant - what a great idea. I bet the sweetness of the shortcake was great with ham and cheese. The sweet version looks great too! Thank you so much for baking along with me this week!

BTW, you asked me about some ice cream bowls awhile back (and I am so sorry I never got back with you!!) but I got those ruffled bowls at Sur la Table last year. http://www.kaboodle.com/reviews/ruffled-italian-ceramic-ice-cream-bowls. I don't see them this year, but maybe someone else carries them (or ebay?) They really are fun and I think they sold out last year, so I really wish SLT was carrying them again this year!

oh lovely! Maybe I shouldn't have insisted on milking mine down to be drop cakes. One of my favorite treats from a restaurant in NC is sweet potato biscuits sandwiched with ham and cheese--I bet this would be good, too!

Both your sandwiches look delicious, and what a good idea! I could have had a balanced meal of shortcakes instead of just stuffing myself with sweet ones! It's been pretty chilly here recently too--only 10C the other day.

What wonderful shortcakes! I like the "old" one better... a cell phone??? :) Ice cream - now that's a great idea.. for some reason I'm hooked on whipped cream. But these are great biscuits for anything - even savory!
