TWD: Gingered Carrot Cookies



I was really curious about these. Dorie says they are scone-like. I wondered... are they dry? thick and cakey? flaky? chewy? Do they lend themselves well to being smothered in cream cheese frosting? The answer is definitely a "YES" to the cream cheese frosting part. I made a cream cheese glaze which complimented the cookies just as cream cheese frosting goes with carrot cake.



I would describe their texture as being moister than a scone, denser than a cake and thicker than a cookie. If you don't like raisins, I would recommend substituting Craisins or chopped, dried apricots or even better, dried pineapple! Don't omit the dried fruit altogether because in my opinion, the raisins stole the show, closely followed by the dried pineapple - little golden bits of goodness embedded in the batter.

I used chopped dates they were great. Love your frosting. Mine are in the freezer. I will frost them with an orange buttercream drizzle. Yummy!

Dried pineapple sounds like a delicious variation! And, of course, everything is better with cream cheese icing! Nicely done.

Glaze is a great idea. They were not easy to frost.

I left out fruit and now wish i had put something in. The flavor was a little flat without it.

Perfect description of these cookies. I used dried cranberries and like you added a cream cheese frosting element.

Your cookies look perfect! I don't love raisins, so I didn't use the full amount; I love your idea of pineapple since a lot of carrot cakes contain it.

Pineapple - I've seen that in recipes but never used it - these look wonderful! Especially the glazed ones - they're gorgeous. I'll have to pick up dried pineapple this weekend - love that idea!
